Kotlovina, a beloved traditional Croatian dish, particularly in northern Croatia and Slovenia, holds a special place in the hearts of locals as a symbol of communal gatherings and the joy of outdoor cooking. 

Typically prepared at homes, festivals, events or amidst nature, this meaty delight brings people together around a shallow, large plate positioned above an open flame.

The key to preparing kotlovina lies in the unique cooking setup. A shallow, sizeable plate, usually made of cast iron, stainless steel, or occasionally aluminium, is placed on a base with a fire pit. The fire can be fuelled by wood or gas, providing flexibility in the choice of heat source.

In Croatian, “kotao” translates to cauldron, and this dish is named after the cooking equipment.

Pork chops, beef neck and sausages are the most popular. They are fried and then simmered in their juices, wine, or assorted spices. Typical local accompaniments include onions, potatoes, tomatoes, bell peppers, and paprika.

The preparation process offers ample room for creativity, and there are numerous recipes to explore.
