Over the years, I witnessed the transformation of the Croatian wine landscape, from humble beginnings where house wines dominated restaurant menus to the emergence of world-class wineries competing on the global stage. One such gem that I had the pleasure of discovering recently was Fiolic Winery, a small boutique winery nestled in the charming town of Zadar.

Zadar, with its rich heritage, has earned accolades as one of Croatia’s most prominent tourist destinations. Amidst its historical allure, Fiolic Winery stands out as a beacon of excellence, offering wine enthusiasts an unparalleled tasting experience. What sets Fiolic Winery apart is not only the quality of their wines but also the passion and dedication of its winemaker, Dario Fiolić along with his wife Ana who is an excellence English speaker. Which is a great help (when you are an English speaker) when visiting the tasting room.

One of the noteworthy varietals that Fiolic Winery masterfully crafts is Maraština, a grape variety abundant and easy to cultivate, found throughout the Mediterranean, including the Croatian coast. In the south of Dalmatia, it is known as Rukatac. Recent discoveries have revealed that Maraština shares its genetic heritage with other Mediterranean varieties, leading some experts to believe it originated in Dalmatia due to its exceptional features and quality.

What makes Maraština truly special is the skill required to transform it from an easy-to-cultivate grape into an exceptional wine. As I first experienced Fiolic wines at a friend’s dinner in Zadar, I was immediately captivated by the complexity and elegance of their Fiolić Sur Lie. Sur lie ageing is when wine is kept in contact with its lees during the ageing process and the 12 months of aging in wood barrels made from the Acacia trees that gives the wine a lovely deep and lively body to the wine. This initial encounter led to a tasting session where I had the opportunity to meet Dario Fiolić and gain insights into his passion for winemaking. Along with tasting many of his other wines.
