MasterChef Croatia winner Ivan Temšić shares his special autumn duck recipe

For the first time in Dubrovnik, the street food festival “Bavarin” will be held from 13-16 October in the historical setting of the Lazaret. 

This week’s street food festival will have on offer food from the best local chefs and restaurants in Croatia. 

One of those top chefs who will be at Bavarin is current MasterChef Croatia winner Ivan Temšić andshe has shared one of his recipes ahead of the festival.

AUTUMN DUCK by IVAN TEMŠIĆ

INGREDIENTS:

Half a butternut squash
One duck breast
A few leaves of kale
Garlic
Salt, pepper
White wine
Thyme

PROCEDURE:

Season the duck breast on the meat side with salt and a little sugar and pepper, and then cut the skin side in with a diamond pattern so that the fat can be reduced more easily during cooking.

Cut the butternut squash in half, clean the seeds, also cut it, season it as desired and bake in the oven at 180°C for 45 minutes.

At the same time, at the same temperature, “crunch” the previously washed kale for a few minutes, adding a little oil and salt.

Place the duck skin side down on a cold pan, gradually raising the temperature, moving off the excess fat that you will incorporate into the pumpkin cream when mixing it.

Brown the rest of any bones in a pan with some garlic and herbs, deglaze with white wine and bind with butter for the sauce.
