Nikola Božić, the owner of the restaurant Đurina Hiža and mobile food brand Reshetka during the spring lockdown created a new project Deda ide po svetu (Gramp travels around the World) together with his family. 

They were preparing local delicacies but also offering products of other local producers (small family business) and delivering them throughout Croatia. Nikola proudly underlines the fact that he drove about 100,000 km providing the goods. However, aside from the home delivery of meat, he would also like to educate people about meat preparation. Therefore, his customers receive a lot of advice about the preparation of delicious food, and also tips&tricks he always happily shares with them.

For this festive season, to enrich the offer of the above mentioned Deda ide po svetu project, he has designed a new program named Low&Slow. He is sure that meat lovers will be thrilled when they try something from the Low&Slow program. He prepares meat using the slow-cooking technique at low temperature, at an indirect fire of about 100° Celsius. This approach gives the meat an exceptional smoky taste, a unique flavour, and succulence.

Nikola has introduced home delivery of semi-finished meat, as home-delivered meals usually lose in quality. To enjoy these meals to the fullest, you just need to finish their preparation that takes approx. 10 minutes – warm them in the oven, pan, or briefly grill them. He offers pork ribs, pulled pork, and lamb’s shanks. They are great options for family meals, and also, as such, could be an original holiday gift to your friends or business partners. Also, you can organise a virtual dinner and enjoying these delicious bites.

Nikola also shares his knowledge and experience at lectures and workshops organized by Aspira, a specialized school providing gastronomy study programs. He participates in the World’s Kitchens within a Gastronomy project as a lecturer on street food. He is also turning into a smoked meat specialist, with the help of Peter Hajdu, a Slovenian pitmaster and international judge at world barbeque competitions.
