New Year’s recipe: Francuska salata

Although not a traditional Croatian dish, French salad is a festive-season must in a lot of households in Croatia, especially on New Year’s Day.

Known also as an Olivier or Russian salad, it is a traditional salad dish in Russian cuisine and is served especially during New Year’s Eve celebrations.

Here is a simple recipe, with video instructions.

Ingredients

Peas – 450g
Mayonnaise – 450g
Potatoes – 400g
Carrots – 400g
Gherkins – 200g
Eggs – 3 (hard-boiled)
Celery root – 150g
Apple – 1
Cream – 100g
Mustard – 1 tablespoon
Lemon juice – 20ml
Salt
White pepper

Also known as Olivier or Russian salad

Instructions

1. Dice all the vegetables and hard-boil the eggs

2. In a pot of water put in the carrots and celery root, add salt and cook for 10 minutes

3. Then add into the pot the frozen peas, diced skinned apple and cook for a further 5 minutes

4. In a bowl put in the mayonnaise, add mustard, cream and mix well

5. Drain the cooked carrots, peas, celery root and apples and put in a bowl you will serve the salad in. Add the mayonnaise, mustard and cream mixture

6. Add then the diced gherkins, hard-boiled eggs, and cooked potatoes and mix well

7. Add salt, white pepper and a little bit of lemon juice and mix again

8. Let it cool, put in the fridge to cool further and then serve
