Scampi buzara, or Škampi na buzaru, is one of the most popular dishes among tourists visiting the Croatian coast in summer. Scampi cooked in garlic, tomato, and a white wine sugo.

Scampi – 1.5 kg
Olive oil – 150 ml
Tomatoes – 2
Garlic – 6 cloves
Parsley – 2 teaspoons
Breadcrumbs – 2 teaspoons
White wine – 200 ml
1. Peel the tomatoes (easy after putting in boiling water for short bit) and dice.
2. In a pot put 100-150 ml olive oil, add the scampi and shortly fry. Add the finely chopped garlic, half of the parsley, white pepper, sea salt, diced tomatoes, breadcrumbs and mix well.
3. When the garlic starts to release a strong smell add the white wine and cover. Let cook on a low heat for 10-15 minutes.
4. Add the rest of the parsley and the scampi are ready to serve.
