Five-star hotel and first Ana Roš restaurant open in Poreč

A historic landmark on the waterfront in Poreč has been turned into the luxury boutique Jadran Heritage Hotel and a new restaurant JAZ by Ana Roš.
The new five-star property, part of the Valamar portfolio, is located in the restored historic building of the former Hotel Jadran, originally built in 1913.
Situated in the heart of Poreč’s old town, Jadran Heritage Hotel has been designed as an intimate and elegant boutique property with just 12 exclusive designer rooms.
“The interior blends original architectural elements with contemporary design and artistic details, highlighting both the historic value of the building and its distinctive character,” Valamar said.

Each room has been created as an individual concept and, instead of traditional numbers, carries its own name and story inspired by the history and lifestyle of Poreč.
Names such as Lungomare, Kartolina and Meer und Leben evoke different layers of the town’s identity and its long connection with the sea, travel and the culture of Mediterranean leisure.
Through this storytelling approach, the hotel experience aims to go beyond traditional accommodation and offer guests a modern interpretation of one of the most recognisable historic buildings on Poreč’s waterfront.

Located on the ground floor of the hotel is JAZ by Ana Roš, a dining concept created by internationally acclaimed chef Ana Roš.
Roš, one of the world’s most respected chefs and holder of three Michelin stars, designed JAZ as a “young dining” concept where high-level gastronomy meets a relaxed and vibrant atmosphere.

The menu focuses on seasonal and local ingredients, reflecting both regional traditions and contemporary culinary creativity.
The restaurant is not only intended for hotel guests but also welcomes local residents, positioning it as a new social and culinary meeting point on the Poreč waterfront.

Željko Kukurin, President of the Management Board of Valamar, said the project aims to revitalise one of the town’s most recognisable buildings while enhancing Poreč’s culinary reputation.
“We wanted to bring life back to one of the most iconic buildings on the Poreč waterfront and create a space dedicated both to guests and to the city itself. Jadran is designed as a lively meeting place where history, contemporary design and top gastronomy naturally complement one another,” Kukurin said.
He added that the collaboration with Ana Roš and the JAZ concept reflects Valamar’s long-term focus on developing Poreč as a year-round gourmet destination.

Roš also highlighted the personal importance of the project.
“JAZ by Ana Roš is conceived as a place without rigid rules – somewhere people gather for food, conversation and a sense of togetherness. Istria has been part of my culinary language from the very beginning, and JAZ Poreč feels like a natural continuation of that story,” she said.
